Resumen : This project aims to apply a rapid and non-destructive analysis technology (hyperspectral image) to meat matrices (pork received from suppliers or processed products) with special interest for the technology center, given the importance and strong historical linkage of this sector with the Principado de Asturias. The applications studied are: • Discrimination of different tissues. • Estimation of the microbial load (loins at reception). • Estimation of the shelf life of the product, loin fillets (manufactured product).
